Even More Intense Soft Ginger Cookie

It's about that time of year to update cookie recipes, isn't it?

This is a flavorful soft ginger cookie. I developed this recipe because I find many gingersnap recipes to have too little ginger flavor and intensity. This cookie has the perfect balance of flavor and intensity.

Soft Ginger Cookie

Preheat

350F/175C

24 cookies

Combine:

  1. 3/4 cup butter - softened 45s in microwave
  2. 3/8 cup molasses
  3. 3/4 cup packed brown sugar
  4. 1 egg
  5. 2 cup all purpose flour
  6. 1/4 cup plus a little more whole wheat flour
  7. 1 tsp baking soda
  8. 2 1/2 tsp ginger
  9. 1 tsp cinnamon
  10. 1/2 tsp cloves
  11. 1/2 tsp salt - I like coarse sea salt

Even more intense cookie with

  1. 1/2 cup of crystalized ginger (diced)
  2. pinch of cayenne

Mix

with wooden spoon to form a smooth soft dough. Add a little more flour if the dough is moist.

Roll

teaspoon sized cookies into a ball. Press into a disk on a cookie sheet. Sprinkle with sugar.

Bake

8-10 minutes.
