- 3/4 cup butter - softened 45s in microwave
- 3/8 cup molasses
- 3/4 cup packed brown sugar
- 1 egg
- 2 cup all purpose flour
- 1/4 cup plus a little more whole wheat flour
- 1 tsp baking soda
- 2 1/2 tsp ginger
- 1 tsp cinnamon
- 1/2 tsp cloves
- 1/2 tsp salt - I like coarse sea salt
- 1/2 cup of crystalized ginger (diced)
- pinch of cayenne
with wooden spoon to form a smooth soft dough. Add a little more flour if the dough is moist.
teaspoon sized cookies into a ball. Press into a disk on a cookie sheet. Sprinkle with sugar.
8-10 minutes.
